Zucchini (Sausage) Pie
1 Cooked Pie shell
1 C. chopped scallions
3 T. butter
3/4 tsp. dried basil
1/2 tsp. dried oregano
1 1/2 C. shredded mozzarella (6 oz.)
4 C. thinly sliced zucchini
2 cloves garlic (diced)
1/2 C. parsley
1/2 tsp. salt
2 eggs beaten
1 lb. bulk pork sausage

Cook zucchini, onion, garlic in butter 10 minutes. Stir in parsley, basil, oregano, salt, pepper. Meanwhile in skillet, brown sausage and drain well. In a bowl combine eggs, cheese & mustard. Stir in zucchini and sausage. Pour into baked shell. Bake 20-25 minutes in 377 degrees oven. Let stand 10 minutes to set.
