Chicken and Vegetables, Simmered in White Wine

Instructors with UAB’s EatRight Weight Management Program prepare healthy recipes every other Thursday on Fox 6's Good Day Alabama morning show. On September 9, 2004, she prepared Chicken and Vegetables, Simmered in White Wine.

4 (4-ounce) skinned, boned chicken breast halves
¼ cup all-purpose flour, seasoned with salt and pepper
2 tablespoons olive oil
1 pound red potatoes, quartered
1 (8-oz) package sliced fresh mushrooms
1¼ cup dry white wine
¾ cup chicken broth
1 teaspoon pepper
½ teaspoon salt
1 large sweet onion, quartered
1 bay leaf

1. Cut each chicken breast half into 4 pieces; dredge in flour, salt and pepper.

2. Heat oil in a Dutch oven over medium heat; add chicken and cook until lightly browned, stirring occasionally.

3. Add potato and remaining ingredients to Dutch oven. Cover, reduce heat, and simmer 30 to 35 minutes or until vegetables are tender. Remove and discard bay leaf.
