Creamy Herbed Potatoes
Instructors with UAB’s EatRight Weight Management Program prepare healthy recipes every other Thursday on Fox 6's Good Day Alabama morning show. On September 23, 2004, she prepared Barbecued Pork Chops, Creamy Herbed Potatoes and Sauted Spinach.

Creamy Herbed Potatoes

2 cups sliced red potatoes (such as Simply Potatoes)
½ cup low-fat sour cream
¼ cup sliced green onions
1 teaspoon salt
freshly ground black pepper
1 tablespoon chopped fresh dill

1. Cover the potatoes with water and bring to a boil.

2. Reduce the heat to medium and simmer until tender, about 10 minutes.

3. Drain the potatoes well.

4. Place potatoes in a bowl and add the sour cream and onions. Stir gently and add the salt and pepper. Serve warm with a sprinkle of chopped dill.
