16 oz. extra sharp cheddar
cheese - grated
Dash red pepper
16 oz. medium sharp cheddar cheese - grated
1 cup mayonnaise
1 small chopped onion or 1 Tablespoon minced onion
1 cup pecans

Mix all together except pecans, grease jello mold with mayonnaise and pour 1 cup chopped pecans in bottom of mold (preferable to use one with hole in middle). Press cheese mixture firmly on top of pecans. Cover and refrigerate overnight. Invert on plate and decorae with parsley. Put small container of strawberry preserves in center of mold and serve with crackers of choice. Put cheese on cracker and then top with small amount of strawberry preserves.
