| Diane's Breakfast Casserole
1/4 cup flour
1/4 tsp salt
1/4 cup melted butter
Combine these and add:
4 eggs, beaten
1 cup cottage cheese
2 cups Monterey Jack cheese, grated
Optional additions at the discretion of the cook:
1/4 cup of piquant sause (hot or mild)
1/4 cup chopped green peppers
1/4 cup chopped onions
1/4 cup chopped ham (without this, it is an excellent vegetarian casserole)
Pour into 6" x 10" pan at 375° about 45 minutes. Serves 6-8.
Individual crocks an option but these need only 20 minutes of baking time.
Fried Green Tomatoes or a Grits casserole is a nice accompaniment.
This can be prepared the night before. Just put in the oven in the morning, but for best results, serve immediately as this is similar to a souffle
