Honey Baked Apples
1/3 cup dried cranberries, plumped and chopped
4 large tart baking apples
1 banana, chopped
3 Tablespoons honey
3/4 teaspoon ground cardamom or coriander
1/4 cup water

To plump cranberries, place in 1/4 cup boiling water and let re-hydrate. Set aside to cool.

Remove cores from apples and enlarge holes slightly to allow for filling. Be careful to not cut through the whole apple but just past the center, leaving the bottom intact. Place each apple in a 6-ounce oven proof custard cup. Combine banana, drained cranberries, honey, and cardamom. Fill centers of apples. Pour 1 tablespoon water over each apple.

Bake in 350F oven for 15-20 minutes, until heated through and bubbling. Alternately, you can cook, uncovered, in microwave oven for 5 to 7 minutes, or until nearly tender Let rest until cooled slightly.
