Honey Grilled Pineapple
1/2 cup honey
Juice of 2 limes and zest of 1 lime
1 teaspoon Grand Marnier
1/4 cup minced fresh mint
1 large ripe pineapple, peeled, cored, and cut into 6 pieces
Vanilla Ice Cream, for serving



1. Whisk first 4 ingredients in large glass baking dish
2. Peel pineapple; cut crosswise into 6 rounds
3. Remove core; discard
4. Add pineapple to dish; turn to coat
5. Cover with plastic wrap; let stand at room temperature at least 1 hour and up to 2 hours
6. Prepare barbecue (medium heat)
7. Remove pineapple from marinade (reserve marinade)
8. Grill or broil until golden brown, about 3 minutes per side
9. Transfer each slice to a bowl
10.Top with a scoop of vanilla ice cream
11.Pour reserved marinade over
12.Sprinkle with mint
13.Serve immediately
