Cranberry Walnut Muffins
2 cups SR Flour or Bisquick
3/4 cup sugar
1/2 cup chopped dried apricots (optional)
1/2 cup of chopped walnuts (optional)
1/2 cup dried cranberries (or soak in hot 1/2 cup of hot water for 10-15 min)
3/4 cup milk
1 tablespoon butter or margarine, melted
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 eggs

Preheat oven to 400.
In large bowl, stir all dry ingredients just until well blended.
Add eggs and milk, stir until all lumps are gone.
Add cranberries, walnuts and apricots- mix well.
Spoon into greased muffin tin or into paper lined cups.
Makes about 15 nice sized miffins.

Bake at 400 until golden brown or use the clean toothpick method. Usually about 15 minutes.

Serve warm with butter or plain. My kids like then without the walnuts.
