Crock Pot Roast
4 medium potatoes, quartered
2 cups baby carrots
1 stalk celery, cut into 1" pieces
1 onion, quartered
2 1/2 lb. boneless chuck roast
1 can diced tomatoes with herbs
1 caan water
salt and pepper to taste


Place potatoes, carrots, celery and onions in Crock Pot. Trim fat and place roast on top. Mix tomatoes and water; pour over roast. Cover and cook on low for 11-12 hours. serves 3-5 people
