Mediterranean Rice Salad
A refreshing salad perfect for a light lunch or a side
dish.

3 cups cooked brown rice
1-1/2 cups quartered cucumber slices
15-oz. can black beans, drained and rinsed
1 cup chopped seed tomato
1/2 cup chopped onion
1/4 cup chopped fresh parsley
3/4 cup Italian dressing
Jar of artichoke hearts, optional

Toss all ingredients together. Add dressing. Chill.
