Zingy Bean Dip
A light dip that is perfect with veggies and pita chips.

2 cups cooked pinto beans, rinsed and well drained
Juice of a fresh lime
1 can diced tomatoes
1 Tbsp. minced garlic
1 handful of parsley
1 handful of cilantro
2 tsp. cumin
2 small scallions, minced
1/2 tsp. salt
Black pepper to taste
Cayenne pepper to taste


Whip all ingredients in a food processor or blender.
Serve with pita chips, carrot chips, celery and cheese.
